In the opening scene, Sheriff Pangborn comes to the door of the "Dot" Restaurant. He has a band-aid around his index finger. When he gets inside of the restaurant, the band-aid has disappeared.
When Brian Rusk takes the box of apples to the Jerzyk farm, there is a purple liner under the apples. The liner is gone in the next shot of the inside of the box.

However, she is shown carrying a nearly full coffee pot, carrying a cup and saucer, holding a phone receiver: a person with advanced arthritis would be unable to do any of those things.
When the sheriff goes to Gaunt's shop in the rain, we hear the sound of the car coming to a stop. It's dark outside and the car would have been travelling with headlights. However, no headlight glare is ever seen on the shop. When the sherif walks past the hood of the car, the hood is "popped", making it obvious this car was not driven in.
This is not a factual error on the part of "Polly" or the director(s) of the film. People with arthritic hands very often won't shake hands due to the unpredictability of the grip used by the other party. Squeezing the knuckles together, as is done in a handshake, can be excruciatingly painful to the arthritic and has no bearing on whether that same person might be able to lift and pour coffee from a pot.

When the shop explodes at the climax of the movie, Reverend Rose and Father Meehan take shelter behind a gravestone in the churchyard. The stone wobbles back and forth when the priest's shoulder bumps it.
